No training. All cooking! (Day 137)…

No training this week! That doesn’t mean I won’t be training soon, but as of today…No updates! It feels strange not to have a Tuesday Training Tell-All. Kind of like I’m slacking a little? I’ll be back in the sneaks sooner rather than later.
My pantry is PACKED. I’m so excited to open it up and find all kinds of great products and the fridge filled with yummy veggies.
On the dinner table tonight…BBQ Chickpeas with Sweet Potato and Bok Choy (courtesy of fANNEtastic food!)

sweet potatoes, bok choy, canned chickpeas*, BBQ sauce, veggie broth, oil
*TIP: RINSE THOSE CANNED BEANS. Rinsing beans not only washes away that liquid that contains some of the sodium found in canned beans, but it also washes away some of those hard-to-digest sugars that can cause people to be, um…gassy. Drop those beans in a colander and rinse for 30-45 seconds under cool water for the ultimate bean.
Cooking up this meal was super easy and QUICK. At first I was a little hesitant to mix up BBQ sauce with bok choy, but once it started to come together it started to make my mouth water. Something about BBQ sauce just screams “EAT ME!”
A few weeks ago at a wine tasting I found this great
Isabel Mondavi Deep Rose. Typically I’m not a Rose fan, but this unique deep red Cabernet Savignon Rose is juicy, light and perfect for a summer night wine. At around $14/bottle, this is a great addition to any wine cabinet.
One more tip!
fANNEtastic Anne had a great tip for storing left over veggie broth. My tip is for those of us who are a bit more lazy. Go to Trader Joe’s to buy your veggie broth! They have great single serve veggie broth. Just add 1 packet to 1 cup of hot water and you are on your way!
