I made brunch this morning! Surprise, surprise it wasn’t pancakes.
I am obsessed with fried egg sandwiches. I love the way they taste but I know deep down inside that they are not the most nutritious item happening. I decided to do my own A Girl & Her Mutt version of the Egg Sandwich.
“Fried Egg” Sandwich
Cast of Characters:
Trader Joe’s Whole Wheat Mini Bagels, Laughing Cow Light Swiss wedge, Sriracha, 1 Egg
Do you see that little bit of pink on the bottom of the egg above? I have never seen this before!
Have you ever seen a “use by” date on an egg?! Silly Trader Joe’s.
I sliced the mini bagels in half. I mutilated these suckers when trying to saw them in half. Apparently my knives are not made for bread.
I took one of the fun Laughing Cow Cheese wedges and spread it all over both sides of the bagel. There is plenty of cheese to cover both sides!
Can you guess who I made this for? Meeeee! The fun little decoration is just a bit of Sriracha. If you haven’t used this product before or are really sensitive to spice, go easy or nix it. This stuff is HOT HOT HOT.
For my egg is just crack that sucker in a pan sprayed with a little PAM and let it heat up. Flip it once or twice until it looks cooked all the way through. This is the magic that all these little ingredients add up to.
One of these babies is about 220 calories. Not to shabby for breakfast, huh?
When I started to make The Scientist”s I thought the egg looked a bit…odd. It seemed so loooonnng.
When I busted it open I figured out why all that room was needed. Two yolks! I’ve heard of this phenomenon, but I’ve never seen it in person. I should have looked to see if the Use By date had passed.
I made this cute little design on his sandwich and hoped for the best with serving him the double yolk egg. He didn’t complain of any stomach pains during the day so I’m assuming he won’t die from this.
Today is a homework and errands day for me. A new BJs Wholesale Club opened up down the street and I’m going to check it out. Pray for me!

I make almost the same thing!!! But I use the sandwich thines.
And cook pam, fresh garlis and spinach and add that. Soooo good.
I never thought about using a little bit of sriracha to spice up an egg sandwich. Thanks for the idea!
@Christina…I've used sandwich thins before. Now they even have bagel thins that I want to try! I'll add on some spinach next time too. Good call.
