I had a LONG week. I was ready to get home and hang with the mutt.
BUT FIRST! I headed to the gym to run it out. I hopped on the treadmill and ran for 30 minutes. It felt good to get in there and start the weekend off right.
After sweating a good amount I was ready to go home, slap on the PJs and cook up something yummy and comforting.
Pasta and Poached Egg
In the Mix (for 2 servings):
pasta, spaghetti sauce, garlic, spinach, egg
-2 serving rotini pasta (2 oz. uncooked/each serving)
-1 c. spaghetti sauce (I used Trader Joe’s Basil Marinara)
-2-3 garlic cloves
-2-3 handfuls spinach
-Salt & Pepper to taste
-Put a pot of water on to boil for pasta.
-Heat sauce on medium heat in a pan. Mix in garlic cloves and any other spices that tickle your fancy. I used chives and a little bit of sriracha.
-As the sauce starts to come to a bubble, crack each egg over the top. Make sure to keep the separated because each serving gets one egg.
-Cover pan and let sauce simmer until eggs are cooked but the yolk is still runny.
-Once the pasta is ready to be drained, drop the spinach into the pot of pasta and water. Drain immediately. The spinach will cook quickly without becoming too mushy this way.
-Serve up the pasta with spinach, pour sauce over top and place an egg on top of each dish. Break yolk and enjoy!
I know it sounds like an odd combination, but it works! This recipe can easily be switched up to include different flavors of sauces, different veggies and the amount is easily increased.
Once I finished up with this yummy dish, I was pooped! I have a super fun weekend planned including a wine and cheese day with some friends, a going away party and a picnic. Phew…tired from just thinking about all that, aren’t ya?!
