Many years ago, a friend of mine brought some brownies in to work for me to try. They were fudgy, moist and felt so bad for me. And then she let me in on her secret…they were made with black beans!
The other day I bought a box of brownie mix to make and enjoy, but haven’t gotten around to it. Today I opened up my pantry and came eye-to-eye with a can of black beans and I instantly knew what needed to be done.
I kind of remembered the recipe so I just did what I thought was right and hoped for the best. Success! Stay with me here. I know it sounds disgusting but trust me on this. I wouldn’t lead you down the wrong path!
In the Mix (Makes 20 brownies):
-1 package of brownie mix
-1 15 oz. can of black beans
Drain and rinse the can of black beans. Rinse them REALLY well. While you are at it, rinse out the can too. You are going to use it in a minute.
Put rinsed beans back into the rinsed out can. Fill the can of beans up with water till it just covers the beans.
Put the can of beans and water into the food processor and go to town.
Blend and blend and blend and blend until you get a super smooth mixture. *Take note: My food processor is crap. You can get it even smoother than I did. I know you can!*
In the same bowl as the bean and water mixture, add in the boxed brownie mix.
Mix the bean, water and brownie mixture together. No need to add anything else!
From here on out, you are going to follow the instructions on the back of the brownie mix that you have. For mine, I poured the mix into a 13 x 9 greased glass container.
Bake for 28-30 minutes in a 350 degree oven. Again, follow the directions from the back of your brownie mix box.
Slice those babies up! Makes 20 nice sized brownies.
Check out how fudgy they are! So delicious and you can’t taste the beans at all. It is like a Green Monster and not tasting the spinach!
As a surprise for The Scientist I put a few aside for him to take as a treat for lunch. I haven’t decided whether or not to tell him these are bean brownies or not. Maybe just let him rave over them first and then break the news to him?! Hmm…

I have to try this… I hate beans– it’s really their texture that I find disgusting, but if they can be hidden in brownies, well. I’d probably eat them every single day!
LOL Hmmmm brownies are not a dessert I would choose. But I ADORE black beans! LOL I will definitely try this to get some protein in the baby. She is going to be a little vegetarian. But she won’t eat eggs or even peanut butter! It’s a problem!
I have done something similar before using a can of pumpkin, but it came out a bit too spongy. These brownies look so fudgy and rich, I have to give them a try soon!
