Everything with pineapple is awesome. True Story. Agree or disagree? Feel free to discuss among yourselves.

My favorite tv show, Psych, has hidden pineapples in every few episodes. Pineapple chobani is my favorite greek yogurt. Pineapple rings are the most sought after piece of a fruit platter.
So, I’ve officially proven that everything with pineapple is awesome, right?
Then we can all agree that you are going to love these Pineapple Upside Down Biscuits. My parents sent me this recipe and after a few changes I’m in love.
In the mix:
-10 oz. can crushed pineapple
-1/2 c. light brown sugar
-1/4 c. stick butter, room temp (I use I Can’t Believe It’s Not Butter)
-1 10-count package refrigerated buttermilk biscuits
*Drain can of pineapple and keep juice off to the side in a separate bowl. TIP: I could only find a 20 oz. can so I just split it in half to get the 10 oz. needed. The 10 oz. include the pineapple and juice! It will come out to about 8 oz. of pineapple after drained.
*Mix together pineapple, sugar, and butter.

*Grease up a muffin pan and divide up the mixture into 10 muffin tins.
Kind of looks gross huh? Both the pan and the mix. But seriously, how can you go wrong with sugar, pineapple and butter?

*Open up your refrigerated biscuits package and place one biscuit on top of each tin of the pineapple mixture.

*Pour 1 teaspoon of the reserved pineapple juice over each of the biscuits.

*Bake for 12-15 minutes in 400 degree oven, or until golden.

*Once they are done, let cool for about 5 minutes. Turn over muffin tin onto plate to pop the muffins out. I used my giant chopping board to cover the entire muffin tin.

Ok, so I have a secret. I hate maraschino cherries. The recipe called to put a cherry in the pineapple mixture before placing the muffin on top of it. I don’t do those suckers so instead I just placed a fun little bing cherry on the top to give it some color. Plus, I love the way they taste! Pit and all.

Seriously? How good lookin’ are these?

I love pineapple! Have a slight obsession actually. I love sweet and savory but if I had to pick one – SWEET!
