Guess who isn’t feeling too well? This little guy.
How sad is that face?! He was such a good boy at the vet, but he is just a big ol’ ball of nothing now that we are back home. This old boy does NOT like shots. I foresee a lot of treats and belly rubs tonight to lift his spirits.
For now…he sleeps.
I, on the other hand, had a lovely day. I started the day off with a stellar breakfast. I took a note from Gracie over at Girl Meets Health and made VitaTop French Toast.
I have to admit. I’m not a big fan of these VitaTop Corn Muffins all on their own. I’m not sure what the problem is, maybe the texture? Everyone I know loves them so I know I am in the minority.

I have a huge box of them so I figured I would give the french toast a go.
I soaked a VitaTop in a mixture of 1/4 c. egg beaters, a few drops almond extract, 1 tbsp Almond breeze.
Then I just cooked it in a pan for a few minutes. My final version is not nearly as pretty as Gracie’s, but it tasted great!
Definitely give this a try if you have the VitaTops around. It tastes great and is much better for ya!
It has been a long week for The Scientist so after work I decided to whip up a few goodies for him to snack on tonight. I wanted something easy, sweet and quick to make. Sure I want to make him smile, but I don’t have tons of time to make it happen! (Hey Scientist…these took FOREVER to make! Don’t believe everything you read.)
Hello Easy Peasy PBCs! Just in case PBCs=Peanut Butter Cookies
In the mix (Makes 20):
-1 cup peanut butter
-1/2 cup sugar
-1/4 cup egg beater
-1-2 drops vanilla extract
*Preheat the oven to 350 degrees. During that time, mix together the above ingredients with a hand mixer till smooth.
*This may have been a little messy. I get easily distracted and just a small look away can be quite disastrous. True Story.*
*Roll into 20 beautiful peanut butter balls and place on a cookie sheet.
*Take a fork and slightly press each ball down till a little flat.
*Place them in the oven for 6-8 minutes.
*Out of the oven, let them cool for 5 minutes.
*Plate them up and dare yourself not to eat the whole thing!
I did a little quality control and these passed the test. Must.Resist.Cookies!
Hopefully these start the weekend off right for The Scientist. If not, my weekend just got a little bit sweeter! Ha.

Mmm, I love me some PBC’s! Poor Korky, I hope he feels better soon. I always feel SO guilty about taking my cats to the vet. They get so scared and are always exhausted afterward.
