Hello friends! Over the past few months I’ve become quite the fan of other blogs. One such blog is spabettie. Her recipes grabbed by eye because they were vegan but YUMMY! I hate to say this, but I’ve never really thought Vegan=Delish. I’m sorry my fun vegan friends. No worries though…I have since seen the error of my ways! I reached out to Kristina to see if she would be interested in bringing a yummy treat to my readers and she kindly agreed. I hope you all enjoy!

Hello! I’m Kristina of the blog spabettie. One focus of my blog is healthy and balanced eating, which for me includes a mostly gluten free and vegan approach. I have always loved to cook and bake, and enjoy the challenge of converting my old recipes to healthier, vegan + gluten free eating.

When Erin asked me to write a guest post on vegan baking, I was flattered and excited to share! One thing that is important to me when cooking anything is a short ingredient list. I am happy to say this recipe is fairly simple, with ingredients I hope you will easily find.

Vegan Cocoa Cupcakes with Pomegranate Buttercreme:

1 cup coconut flour
1 1/2 cup rice flour
1 1/3 cup cocoa powder
1 tablespoon baking soda
1 1/2 teaspoon sea salt 2 cups maple syrup
1 cup olive oil or canola oil 2 cups water

Combine flours, cocoa, baking soda and salt. In separate bowl, combine oil, water and maple syrup. Makes 24 cupcakes. Bake @ 350 for 20 minutes, until inserted toothpick comes out clean.

While the cupcakes cool, gather this cast of characters for the frosting

Pomegranate Buttercreme:

4 cups organic powdered sugar
1/2 cup
Earth Balance vegan butter substitute
5 tablespoons pomegranate juice
food coloring (optional)

Combine powdered sugar and butter (I used my stand mixer fitted with paddle attachment; a hand mixer would work, as well as good old fashioned arm power!). Beat until incorporated, add pomegranate juice and coloring. Frost cupcakes when completely cooled. I used a piping bag + tip; before I had one I used a sandwich bag with a hole cut in one corner!
