Last Friday when I went to the Farmer’s Market I picked up some oatmeal cookies. I enjoyed one and then…well…Korky ate the rest. HOW GREEDY IS THAT?! These were sooooo good.

He has an ability to stretch himself to unbelievable lengths. Including a length that allowed his little nosey snout to get to the bag of cookies and chow down before I noticed. So sad!
Rather than cry into my milk, I whipped up some oatmeal cookies to put a smile on my face and make do until I can hit up the next farmer’s market. Ready for some sugar and homemade goodness?
Hello Tablespoon Oatmeal Cookies!
In the mix (Makes 24 tablespoon sized cookies):
-1.5 cups quick cook oats
-1/2 cup butter (I always use I Can’t Believe Its Not Butter), room temp
-1/2 cup white sugar
-1/2 cup brown sugar, packed
-/2 teaspoon baking soda
-1 cup flour
-1/2 teaspoon salt
-1 teaspoon cinnamon
-1 egg
-1/2 teaspoon almond extract
NOTE: I don’t DO raisins. Feel free to add them if your little heart desires. It is up to you if you want to muck up perfectly good cookies.
*Mix together butter, sugars, oats, flour, baking soda, salt and cinnamon. Add in eggs and extract.
*Cover bowl of dough and cool in fridge for about 30 minutes- 1 hour.

*After chilled, measure out 24 tablespoons of dough onto a greased cookie sheet.
*Bake for 8-10 minutes in oven at 375 degrees. Allow cookies to cool completely.

Holy oats…these were so good! Nice and kind of gooey on the inside. Just the way every cookies should be in MY humble opinion.

Notice how there are NOT 24 cookies on this plate? Well, lets just say they were popular by all those that I love in my little family. The Scientist and Korky included.

After what was a week that can only be described as “hectic”, I will be enjoying a quiet night at home. I see pizza and a movie in my future. Tomorrow I will be spending some time with the girlies and I need all the rest I can get!

Congrats on moving on to round 2! I don’t do raisins either, and have been craving oatmeal cookies. I had planned to make some last week but never got to it. This weekend may have to remedy that, especially after seeing this recipe.
