Winter Warmer…

Ok, it hasn’t snowed in Boston yet. I know I should be celebrating this, but it makes me nervous. Does this mean that we are going to have an EPIC snow storm soon?! Eek. I should start pulling out the snow wear just in case!

Despite no snow…it is getting quite chilly. It is the PERFECT time for some solid and hearty soup.

Enter…Winter Warming Soup! This soup is made with ingredients you can almost always find in your pantry and is perfect for a day when you don’t feel like fighting the cold air to get to the grocery store.

In the Mix (Makes 10 cups):
-1 can fat free refried beans
-1 can black beans, rinsed
-1 can corn
-1 can green chilies, 4 oz. diced
-1 can fire roasted diced tomatoes
-2.5 cups vegetable broth
-soy chorizo
-2 green onions

Directions:

*Cook soy chorizo according to directions. Slice and prepare to add to other ingredients.

*Combine all ingredients into a large pot and heat over medium heat. Stir occasionally until the refried beans have thinned out.

*Once heated through, pour into bowl and top with diced green onions. ENJOY!

As you read this I am probably eating a lovely little bowl of this at my desk. Mmmm….my coworkers are jealous. I promise you! Winking smile

Ohh I never thought to use refried beans in soup before but I love the idea!

It makes for a creamy consistency without actually using cream. Lovely!

Delicious – I’m a big fan of refried beans. I could probably eat them everyday. I love, love, love you in your purple snow jacket. <3

Ha! I try to put it over my nose but I start to get to much condensation going on in the muffler. Then I feel like I’m being suffocated. Lots of fun. ;)

This sounds just perfect! We have snow here, and it’s been down to the single digits already for us. A warm soup is just what we need. :) Love that its meatless too.

Something about soy chorizo kinda scares me but it also kinda intrigues me as well! It was 40 here today and the peeps are freaking out. Um, it’s December, bring it!!! I want some snow here, we barely get any :(

That soup looks perfect for the colder weather. Yum!

I live in Chicago and we are supposed to have our first big snow storm this weekend. I’m so not prepared to deal with the snow.
