Did I mention that I kicked butt at Scattegories this weekend?! Apparently I can think of oodles of crap all starting with the same letter. Where do you think that talent can be fit in on my resume? Winking smile

My friend, Claudia, invited a few of us girls over for drinks, some munchies, and some good ol’ fashioned board games. I LOVE BOARD GAMES! I think this comes from years as an only child playing the card game “War” all by myself. *Keep your snickering to a minimum please*

The master bartender immediately treated me to a frosty beverage and I sat myself smack dab next to the grapes.

No lie…I ate a BUNCH of cheese too. Lets keep the focus healthy though, k?

Let the games begin!

During Apple to Apples, which was rigged for me NOT to win, I sipped on a Bahama Mama.

Specialty of the house drink!

It was a nice relax night with the girlies. Any night that lets me show up in my yoga pants and fave cardi is a good night in my books. Plus, its hard to not appreciate a well stocked bar. Nice work Claudia. Nice. Winking smile

In other news…

I’m am currently embarking on “Project Eat What You Have”. My pantry is bursting at the seems, but for some reason I feel the urge to go to the grocery store. It’s a sickness I tell ya! I love taking my cart through the grocery store and stocking up on fun yogurts, big bottles of seltzer, cans of beans, and more produce than a family of 6 could consume.

I thought about showing you a photo of my fridge, but my parents read this blog and I’ve made a firm commitment to not embarrassing them on a regular basis.

Here is what “Project Eat What You Have” has produced so far.

Bean Burritos

In the Mix (Serves 2):
-2 whole wheat tortillas
-1/2 can black beans (Don’t forget to rinse them off!)
-1/4 onion
-1/2 orange pepper
-2 cloves garlic
-2 wedges Chipotle Laughing Cow Cheese

*Heat the veggies up in a skillet, mix in the beans, and then drop the cheese into make a bit of a cheesy mixture.

*Heat 2 tortillas up in the microwave and then place bean mixture directly in the middle. Roll your little heart out!

I topped mine with a little of the TJ’s enchilada sauce. I could drink that stuff out of a bottle. I won’t. BUT I COULD! These little burritos were pretty filling and the stuffing was all nice & creamy because of the cheese. The Scientist even gave them the thumbs up. Score.

Tuna Cucumber Cups

In the mix:
-1 6 oz. canned tuna
-dijon mustard
-1 wedge Laughing Cow cheese
-1 English cucumber

*Mix together tuna, mustard and cheese. Cut the cucumber in rounds an inch or two thick. Scoop out the middle and fill with the tuna mixture.

It looks like the world is about to end with all the tuna that I have in the pantry. Seriously. Mercury poisoning anyone? Kidding…kind of.

These remind me of a sushi roll that I eat sometimes that has cucumber on the outside instead of rice. Ok…now I’m craving sushi and that is NOT in the pantry.

So that is the fruit of “Project Eat What You Have” so far. I’ve dedicated myself to buying only fresh produce (just what I need) and seltzer until I clean out a bunch of my junk. Anyone want to join me in this challenge?! Please don’t tell me that I’m alone in my food hoarding.

My absolute fave is Clue! Someone have a game night and invite me over. I’ll bring Tuna Cups! Winking smile

Drinking and board games is a winning combo! And your bean burritos look delish. I know you might not want to admit it, but I think my love of beans rivals yours. ;) I love Scrabble. My sisters used to love Clue and I was too young to really get it. Billy is a Monopoly genius so I don’t enjoy playing with him. I love games like Apples to Apples and Catch Phrase, though!

I’m totally a board game person…I love Apples to Apples but my favorite is Cranium…best game EVER.

I just finished eating out of my pantry and have gone back to grocery shopping again. It saved me a bunch of money but boy did I miss grocery shopping!

I love Trionimos! We also bought the game “Smart Ass” over the Christmas holidays and we’ve had quite a few games (& laughs) with it as well.

I know what you mean about eating what you have. Our house is well-stocked, yet I always seem to be at the grocery store picking up something!!

The game of LIFE! (the board game, not being philosophical.) and monopoly i guess.

The tuna cucumber’s delicious. I once made something like it, used chicken and mayo instead of tuna though.

You can stuff cucumbers with anything! I want to try a crab mixture next. Mmm…

Do you know that I don’t think I have ever played LIFE for real? We always played some other version that didn’t really follow any rules. Bunch of cheaters…
