Slow Cooker Love…

I think my pantry is reproducing with my fridge. I’ve been using food up left and right and it isn’t going ANYWHERE. I still have just as much as I did before! *I’m keeping an eye on you fridge and pantry!*

Latest “Project Eat What You Have” Eat!

Slow Cooker Lasagna

In the Mix (Serves 2):
-3 lasagna noodles
-1 c. cottage cheese
-1/4 c. egg beaters (or 1 egg)
-1/2 c. pasta sauce
-1-2 String cheese sticks
-spinach

Optional
-garlic
-basil
-S&P

*Mix together the cottage cheese, egg beaters, and any seasoning you might want in your cheese mixture. I used garlic, basil and a little S&P.

This is cooked in 2 qt. cooker so I had to be a little creative with how I built the lasagna. I broke the noodles up into squares so I could make my base. For each noodle layer I did the same thing. I only needed 3 noodles using this method.

Then the magic happens. Layer, layer, layer. Noodles, cheese mixture, sauce, spinach, a few strips of string cheese. Noodles, cheese mixture, sauce, spinach, a few strips of string cheese. Keep going until you run out!

Cook the lasagna on high for about 4 hours or low for 6-8.

The result…delicious, moist and fantastic lasagna without a bunch of leftovers sitting around to tempt you. *EAT ME ERIN!*

I paired mine with some green beans (still eating the extra that I bought from my attempt at green bean casserole for Christmas dinner).

Apparently while I was eating a certain pup got a little jealous that I was having my meal and he wasn’t. He knocked his food and water bowl right off his placemat during this temper tantrum. Naughty puppy. Winking smile

Happy Thoughts:
-I had a wonderful weekend that included an EPIC brunch (pictures to come soon!)
- I bought Whey Protein powder to start making shakes. I’m not sure how excited I am about this.
-Netflix streaming is awe-some!. I’ve been watching Psych on and off for 3 days now.
-I’m getting a new office setup at work this week!
-Lunch is packed and ready to go for the whole week. WOOT!

I love that you used string cheese in there!! Lasagna in the crockpot has been on my list for a WHILE. I’m so glad to see your version of it – looks delicious!

2 things to comment on and I’m so excited to hear back!
1st: Did you use the no-bake noodles or regular and did you cook them first or just break them and put them in the crock pot raw?
and 2nd: I bought 100% whey protein (vanilla) over the weekend! Just had it today for the first time after my morning run (as a breakfast drink). How are you going to be using it? As a supplemental drink or meal replacement or what? I have heard mixed reviews on women and whey and it’s purposes for lean body intentions/ weight loss.

I’m excited to answer!

1. They are regular noodles that I break when they are raw. These were actually the cheapest noodles you can get at the store. They were on sale for $1! I just had to use them up.

2. I’m using my whey protein powder as a supplemental drink. Its one of the easiest proteins to get because you get all the bonuses without all the fat or lactose.Plus, it helps keep blood sugar levels regular which is a bonus for me.

Ok, so when I saw slow cooker lasagna I was a bit skeptical but wow, it looks amazing! I’ve heard about people makig it before but I guess I’m old school and like making pans of it.

Isn’t Netflix fabulous? I spent Saturday night watching 30 Rock and I’m not afraid to admit it.

Lincoln gets bratty when he sees me having a good meal…..I am lenient and usually let him get the scraps though :)

I LOVE Netflix. I hear that they have workout videos for instant streaming. Have you heard this?! I keep forgetting to look!
