Just another manic Monday…

Whoooooaaa whoooaaa! I wish it were Sunday ‘Cause that’s my funday.

Today was seriously one of those days where I was trying my best and it just.wasn’t.working. Eh. At least I liked my outfit! I’m totally into this whole belted scarf look and finally found the perfect belt to achieve the look I was going for.

There is something about an outfit that you are just totally digging that can really turn a frown upside down.

I find that whenever I have a great weekend I have a really hard time getting back into the swing of things. I want the fun days to last for-ev-er (said in my best The Sandlot voice). My weekend was just stellar. I indulged in a dinner out, March Madness, a Yelp Elite event at a movie theatre, and a few beers in a can. What?! Don’t try to act like you are above canned beer. Winking smile


Yep, that beer was consumed in the movies at 11am. That’s how I roll. Oh, and I want it noted that these were part of the Yelp event. I just don’t prance around with beer in my bag to drink randomly.

On Saturday night I went my church’s annual dinner potluck dinner. I’m still knee deep in “Project Eat What You Have” so the kind folks at my church were subjected to a recipe made out of things I’ve had the best intentions of using in the past.

Hellllllo Cranberry Couscous. Not to shabby for a pantry eat, right?!

Lets be honest though. I can only eat the stuff I find while rummaging around my pantry for so long. Fortunately The Scientist came through and suggested an early dinner on Sunday for Sushi. I typically reserve Sundays for all things that start with a “S”. Shopping, sushi, and sleeping!

The last thing I did before dropping face first into bed was get my meals ready for the week. Here is a little glimpse into my madness.

*Boil eggs for breakfast/snack. I typically put one or two in a baggie with some seasoning to grab n’ go.
  

*Divide up some cottage cheese into 1/2 c. portions with a little seasoning. I picked this new Smokehouse Maple for this batch. 

*Create salads for M & T to serve as the base for whatever I make for dinner the night before. Since I had sushi, I also mixed up a can of tuna with some mustard and Sailor’s Swagger. On Tuesday, my salad will be the base for Monday night’s dinner leftovers.
     

*I also cooked up some spaghetti squash to be part of dinner on Monday and the base for my lunch on Wednesday. Spaghetti squash heats up so well the day after (and after that).
  
  

I know those little “meatballs” look strange. They are really frozen soyballs. I usually just stick them on top of my spaghetti squash the night before and then let them defrost. They heat up fine the next day. Is that gross?! Possibly. I’m a little nervous about putting that one on the internets.

Lunch for Wed, Thurs & Fri is usually a combo of whatever I have for dinner on Mon & Tues. Clear as mud?!

Come Monday morning I blended up my Whey Protein shake (1 scoop whey protein w/ 1 c. frozen strawberries), grabbed one of a few of my pre-made goods and was off to conquer the day.

  

*Salad w/ tuna, seasoned cottage cheese, 1 plum, 1 banana, and a Selzter.

When I’m doing it all on Sunday night I start to think about how much food this all is and is it worth it to do all this prep. However, come Monday or Tuesday morning and everything is already done for me I give myself a pat on the back for taking the time.  *Good Job Erin!*

Wow! Now you are motivated ~ I wish I had the energy by Sunday afternoon to get all our food ready for the week.

I love your Sunday S’s! I am so down for sushi right now and looking at yours doesn’t help one bit. And look at you miss trendy thing–you look aodrable!

PS-When I saw the word “forever” I started to say it the Sandlot way haha

Such a fun outfit!! I just ordered a fun scarf from Old Navy, and now I am totally going to have to try wearing it with a belt when it arrives.

I’m the worst about making things ahead of time, so no tips there, but I am very impressed at all your ideas!
