Hellllooo! I had one of the most wonderful and relaxing weekends. I got a ton of stuff done and I managed to squeeze in some quality beach time. All while getting my Tone It Up 5 Day Slim Down on!
It was the perfect weather all weekend in Boston so the grill was busted out. I took the Hawaiian Grilled Chicken recipe from the Beach Babe edition of the TIU plan and just changed it to skewers. Easy and so good on the grill.
I kept breakfast and snacks pretty easy with greek yogurt, blueberries & touch of Stevia and Coconut water. I couldn’t find any frozen blueberries and went with the fresh. Sometimes I forget how wonderful fresh blueberries are! I could easily pop those things like candy.
Sunday was the best beach day ever. There wasn’t a cloud in the sky and it wasn’t so hot that I wanted to just sit in my air conditioned car and look at the beach. I actually sat out, got some sun and enjoyed a good read.
I remembered to pack some good eats with me including the Citrus Garbanzo Salad from the Beach Babe TIU edition. The only thing I did different was add in some chopped up jalapenos.
So Beach Week started off on the right foot…in the sand! You can still sign up and play along with me.
In other beach related, but sad, news…a hurricane is heading toward the Gulf Coast area. I’ve been in constant contact with my parents while they prepare and we have our fingers crossed that it isn’t no big thing. It is looking like they won’t get a direct hit, but you just never know. For those of you in that area, STAY SAFE! Could you cross your fingers for them too?!
