Good morning! As I headed to bed last night I had a huge smile on my face. Typically Sunday nights are rough, but after a fantastic weekend I couldn’t help but smile.
The biggest thing that happened…I met this little lady!
My friend Priscilla is the proud Mom to the cutest baby ever and on Saturday I finally got to meet her. Plus, I got to visit with her Mom and Dad. 😉 She is 7 weeks old and I had big plans to go meet her when she was first born, but I was sick sick sick. Then I was on vacation and then just junk was in the way. Fortunately Saturday was the day to make a day trip to Connecticut and meet the baby!
I was in love from the minute I met her. She has the cutest cheeks and just the loveliest little smile. Perfect!
I’m not sure if I have ever mentioned this on the blog, but I’m not leaning towards the Mom track in life. I absolutely adore little kids, but I’ve never been one to babysit, have never changed a diaper, and just overall haven’t been that Mom-like. Unless you count being bossy. 😉
However, over the past few years my friends have started to have children and I have learned to embrace a new role…AUNT ERIN! I come in to hold them, play with them, and then hand them back to Mom when a mess starts to happen.
Don’t we look like quite the team?! I’m so thankful that Priscilla is letting me be a part of her family’s life and I can’t wait to watch not only this little one, but the whole family grow over the coming years.

While I was in Connecticut we did a little bit of walking around, including a visit to East Rock Park around sunset. I didn’t want to leave Korky at home the whole day so he actually came with us. We all got a chance to stretch our legs and see some nice views.
We followed up the outdoor walk with a visit to Miya’s for some sushi and sake!
I wasn’t as pleased this time around with the service, but as always, the food was wonderful! We were seated in a weird spot for my camera this time around so be sure to check out posts here and here for some super sushi photos.
Just a few hours after dinner we were back in Boston. Easy peasy!
Since Saturday was dedicated to a visit to the Little Lady, Sunday was dedicated to relaxing and getting my stuff together for the week. After an extended period of time on the couch catching up on TV I finally got my butt up to get lunch together for the week.
The starring player in my meals is the ToneItUp black bean burgerfrom their Meal Plan. The biggest difference I made was to use hemp hearts instead of flax seed. I loved the change in not only texture but also the slightly nutty taste that the hemp hearts provided!
Topping the burger is one of my favorite finds in Boston, Samira’s Muhammara.
It has a similar texture to hummus but is really a mixture of fire roasted red peppers, toasted walnuts, lemon juice, spice and pomegranate molasses. It has the tiny touch of heat with a pinch of sweetness.
While I was whipping up a batch of black bean burgers for the week I also roasted some brussels sprouts. A little combo of olive oil, salt and sunflower seeds.
All together with a plum for good measure and lunch is served for the next few days!
I was in bed by a normal time and ready to start the week on the right foot.
