3 Day Weekend!

Hi friends! Did everyone have a good weekend?! What I thought was going to be super relaxing and kind of boring weekend ended up being a super relaxing but also VERY busy weekend.

Ready for a recap?! Lets go!

Friday…Friday night is usually Sushi night with The Scientist, but he bailed on me for the holiday for his own little vacation (boooo! ;) ) so I had the whole weekend free. Rather than sit at home and be jealous I decided to meet up with a friend for dinner at one of my faves, The Local.

Ya buddy. That happened!

Saturday… I woke up bright and early to spend a day of solitude at the beach. It was officially the first beach day of the season!

I had a pretty nice set up and because I got there early enough I was able to stake out a nice spot. To make up for my awful awful food choices from the night before I decided to nosh on fruit and other healthy goodies while I was at the beach.


It was hot as heck out there, but I survived. I also was completely adult-like and managed not to get sunburnt (sunburned?). The Scientist was thrilled when I told him that I wouldn’t be hobbling around with a sunburnt butt for a few days.

After a much needed shower and nap I got all cleaned up to meet up for dinner with a couple of the girls for dinner in Harvard Square.

My meal was FANTASTIC! The food and drink at Russell House never fails me. We weren’t quite ready to head home after dinner so we hopped down the street to Shay’s Pub & Wine Bar for a few drinks. Oh, and to read funny poems and pictures in the men’s bathroom.

Sunday…It was all about tea. Tea Party Karen invited several of us over for a few mimosas and finger foods. I LOVE tea parties at Karen’s!






I brought two contributions to the party. A version of the Tone It Up Peanut Butter Balls and a cucumber salad. More details to follow on those later this week!

I tried to convince Karen that a great idea would be for all of us to end the party with a nap on her floor, but everyone thought I was joking. I was not. So instead I headed home. Relaxed on my couch and bugged the dog.

Monday… I woke up bright and early to get my sweat going. I am working on the C25K program. The earlier I get it done in the day the better. I can easily talk myself out almost anything in the morning. It is a skill! There is a great path near my house to run and it has a huge field to play on.


By the time I got home I was sweating like a pig, but wasn’t quite ready to give up the sun. I took a quick shower and then tried to convince Korky that he likes the great outdoors. It didn’t work. He spent most of the time standing in the driveway by my car door. Apparently he wanted to go on a ride.

Korky and I ended the day with a nap (we are nappin’ fools!) and a little bit of grilling.

Turkey burgers with a portobello mushroom bun! More details on this later on this week too.


Korky and I missed The Scientist a ton over the weekend, but we managed to enjoy ourselves immensely. Who doesn’t love a weekend full of friends, good eats, and a bunch of drinks?!

Comforting…

Phew. This past week has been toouuuuggghhh. Funerals are NOT fun, but being with family was quite comforting. I also found it really comforting to get all your comments, tweets, and messages expressing your condolences. Thank you, thank you, thank you.

I got home on Saturday night and was not in the mood to cook. I wanted something comforting and easy. I’m no different than most. My comfort food includes all things carb-o-licious. Mashed potatoes, mac & cheese, spaghetti, and anything else that is white with carbs. However, after a full week of “fun eating” with my Dad and eating on the go in Pittsburgh, I wasn’t in the mood for a totally full belly. Enter…guacamole. I love all Mexican food. I think it has a  lot to do with my love of beans. Guac is part of that love.

Everything in my house is easy. Including making guac. Here is a great base  that you can easily add whatever spices or herbs (cilatro…ewww) that you would like and doesn’t break the calorie bank.

Guac Remix!

In the mix:
-1 ripe avocado
-Salsa to taste (start with 2 tbsp and add as wanted)
-1 Laughing Cow Swiss Cheese Wedge

*Cut your avocado up to mix with the salsa and cheese.  The cheese will add that creaminess that mayo usually gives guac.

*Mix together and ENJOY!

The color isn’t the best and it doesn’t look absolutely amazing, but it tastes like LOVE and all things comforting. Creamy, flavorful and filling!

When my dad came for a visit he introduced me to some excellent chips from the big T (Target!). Mmm…

Why don’t all chip companies do this resealable thing on their bags?!

I could have divided this up to share with The Scientist, but I managed to eat it ALL ON MY OWN.

In other news…to brighten my spirits I joined my buddies at Tea Party Karen’s for a lovely Sunday tea. It was just what a girl needs to lift her ‘tude and put a smile on the face.

 

I took a little nibble of each of these. I completely down the tea sandwiches.

Tea party hats were busted out. Tina can wear this baby like no other woman in the room could. So jealous.

Big thanks to Karen for having us all over and filling our bellies with good grub. Oh…and thanks for the mimosas. Winking smile

So I’m officially back on track. I’m back to the gym today. I’m back to bringing my lunch to work. I’m back to cooking my dinners at home. It feels good to be back. I never realized I enjoyed so much of my routine! I’m an old lady and didn’t even know it. Smile Have a wonderful week and I will see you on Wednesday!!!
