A few months ago I put a call out to my friends on Facebook. “Looking for a tent. Anyone have one I can borrow?” Less than 5 minutes later I had an answer. My buddy, Lee, agreed to let me borrow her tent, or as she fondly refers to it, “the condo”. Unfortunately my summer was a bit of daze due to work obligations and such so the months passed and I didn’t borrow the tent. Fortunately the stars aligned and a camping trip was born about two weeks ago.
I officially marked #6 off my 31 While 31 list (a year late, but still exciting!)

Camping…Instagram Style!
The campground was right next to the beach so the majority of Saturday was spent hanging out on the beach reading, napping and having a few beers. All that salt water air really helped my cold clear up and I was feeling almost brand new by Saturday afternoon. That night was the FSU vs. Clemson game and I couldn’t miss it. Fortunately there were several places nearby showing the game so we came in from the elements to eat some pizza and watch the Noles kick butt.
When I got home on Sunday I was ready for a shower and a nap. Plus it was nice to be reunited with this guy.
He is in desperate need of a haircut, but I really want to wait until he is totally clear of his skin infection. I think I’m being overly cautious on the timeline, but I’d rather be safe than sorry.
Camping was so much fun! Although I am a bit of a girlie girl, I really do enjoy being outdoors. Especially at the beach. Hearing the waves crash, breathing in the salty air, and running the risk of being attacked by a seagull all just make my heart sing. I also have learned over the years that I am a pro at putting a tent up.
I’m looking forward to another trip next year already. Thanks Lee for the tent!

Sunday Night Dinner…Non Instagram Style.
In other news, I also came to a slightly defrosted freezer. Ugh. Rather than get all upset I decided to eat up a few of the things that were in there, including shrimp and corn.
I used this recipe that I found on Pinterest to whip up a quick meal that starred Honey Lime Shrimp. I didn’t change a single thing about this recipe and I absolutely loved it. It was quick, easy and really tasty. Definitely a great recipe to have around for a quick & busy weekday dinner.
While I was perusing the website that had the shrimp recipe I came across another recipe for a spicy corn dish. I made a few changes by using greek yogurt instead of heavy cream and substituted some frozen corn for the fresh corn. Make it with what you got, right?! This corn was spicy, a little salty from the feta, and super easy to make. Another winner! Check out The Dough Will Rise Again for more recipes.
I’m still drowning in tomatoes so I finished the meal with a side of halved cherry tomatoes with a little sprinkle of truffle salt.
This whole meal was put together in less than 10 minutes. BOOM!

I’m starting the week refreshed and revived. I got my meal planning done. I scheduled out my workouts. I’m ready to go! Lets do this.
