Wrap it up…

Remember when I did the giveaway for PB2 with CHOCOLATE?! Well, oddly enough I haven’t had a lick of the chocolate version since that exact day. I got up this morning and I was craving something sweet for breakfast. Hellllooooo PB2! I took a hint from Mary (again! I’m so creepy!) and decided to do a grilled fruit wrap.

Introducing Fresh Fruit Rollup!

In the mix:
-1 Joseph’s Lavash Bread
-1 banana, sliced
-2 tbsp PB2 w/ Chocolate
-1 tbsp chia seeds
-1 tbsp craisins

*Spread the PB2 spread on the bread. Layer the bananas, chia seeds and craisins on top of spread.

*Wrap up all the goodies, cut in half, and heat on George Forman grill for a few minutes.

*ENJOY!

The little touch of tart that the craisins gives this wrap is RIGHT ON.

I should do sweet breakfast more often! I felt like I was breaking the rules and having desert for breakfast. Naughty, naughty.

Lunch was an adventure in throwing things together. I started with a sweet potato and was planning on going the same ol’ black bean or baked bean route, but instead remembered something I heard at HLS from a reader…add cottage cheese!

My lunch creation included cottage cheese, halved grape tomatoes, garlic gold, and a little Sailor’s Swagger Pineapple Hot Sauce.

Mmm, mmm good.

This little dish was so filling. I forgot how much I loved cottage cheese, especially this Fiber One version. It was perfection.

If you can’t tell I’m on a mission to eat from the pantry this week and next. I am going on a little vacation in about a week and I really really don’t want to buy groceries that are going to go bad! Be prepared for some dishes with “character” over the next few days. 😉

Breakfast Cookie…

What? You don’t eat cookies for breakfast? Well, around these parts it is as common as cereal. True story.

Ok, so we all know that I love my ONO, but sometimes I like to mix it up. Big props to The Fitnessista for creating the Breakfast Cookie that allows me to add a little spice to my morning.

In the mix:
-1/3 c. oatmeal
-1 tbsp peanut butter
-1 tbsp unsweetened coco powder
-1/2 tbsp chia seeds
-2 tbsp Almond Breeze
-1/2 tsp honey (just a little bit of sweet!)
-3 strawberries, sliced

*Mix together all your dry ingredients (oatmeal, coco powder, chia seeds) with the peanut butter.

*Add in the wet ingredients and strawberries. Press out onto a plate like a big ol’ cookie.

Fun lookin’ huh? I admit that at first I was totally put off, but I trust The Fitnessista and went with it. SO GLAD I DID! YUM-MY!

*Stick it in the fridge overnight and eat with a spoon in the morning. TIP: If you are looking for a harder, more cookie like consistency, stick it in the freezer about 10-12 minutes before you chow down.

Cookies for breakfast?! YES, PLEASE!

Digging in the Dirt…

The Scientist and I are heading to a BBQ tonight. I asked him the other night, “What are you in the mood for me to make?” He replied almost immediately, “DIRT!” I’ve never heard him commit to something so quickly so dirt it was.

I knew it was going to be a long day so I started the day off with a hearty breakfast of whole wheat smooshness. What is smooshness? It is layers of whole wheat pancakes with bananas. I smoosh them all together and get Smoochness!

Yummy in the tummy. I love whole wheat pancakes! Once I had some serious stuffed stomach action happening I made my way out to do some shopping and enjoy the great outdoors. It was lovely and I loved every minute of it! I got home just in time to make some old fashioned “Dirt” and get it all ready to go. You do know what Dirt is, right? Just in case….it is a mixture of pudding, cool whip and some other things layered with crumbled up Oreos. Don’t forget the gummy worms! Some people put their Dirt in flower pots, but I used a cute pail. We are talking healthy living central right here! 😉

Lets hope everyone appreciates this classic dessert. If not, The Scientist is going to be seriously stuffed with pudding by later tonight.
