This gazpacho is a great way to enjoy some great veggies with lots of flavor. So refreshing for a hot summer day!
In the Mix (Makes 8 servings):
-5-6 ripe tomatoes (I use the tomatoes-on-the-vine)
-1-2 jalapeno peppers (Depends on the spicy level you enjoy)
-4 cloves of garlic
-1 red pepper
-1 red onion
-1 seedless cucumber
-1.5 cups Spicy Tomato V8 juice
-2 tbsp red wine vinegar
-2 tbsp olive oil
-salt to taste (I used about 1 tbsp)
-Chop up all the veggies. Put aside a small handful of the chopped onions, tomatoes and tomatillos. These will be added in later.
-Add the rest of the veggies to a big bowl. Add in the red wine vinegar, olive oil, V8 and salt. Mix together.
-Add the chopped veggies small batches at a time to a food processor and process. Process time depends on the consistency you like and how good your food processor is.
-Dish out the gazpacho and top with a few of the chopped veggies that were put aside earlier.
